Pueblo Nuevo
Pueblo Nuevo: eatery with AC, why the dining room smells of kitchen
Pueblo Nuevo and Betania add up to more than a hundred restaurants according to the Ministry of Health, and many are small eateries with a dining room a few meters from the kitchen. The smell that crosses that distance is not a cleaning problem: it is an air problem.
The dining room smells of kitchen because kitchen air is reaching the air conditioning return and the unit spreads it through the room. It happens when the extractor pulls out more air than comes in and the kitchen draws the difference from the dining room, or when the return sits next to the kitchen door. A smoke test confirms it, and moving the return or giving the kitchen make up air fixes it.
Extractor and air conditioning: the fight over air
A hood with an extractor pulls hundreds of cubic meters of air per hour out of the kitchen. That air has to come in from somewhere. If the kitchen has no intake of its own, it takes it from the easiest place: the door or the pass through to the dining room. The dining room air conditioning, meanwhile, is designed to recirculate the dining room own air. When both run at the same time, the dining room loses air to the kitchen and the kitchen sends odor back through any gap.
The EPA guide for building managers describes this pressure imbalance as one of the most frequent causes of odors traveling from one space to another. In a Pueblo Nuevo eatery, with the dining room two steps from the griddle, the distance is so short that any imbalance is felt at the table.
Short ducts and odor recirculation
The hood extractor and the air conditioning are different systems, with separate ducts. The first expels kitchen air outside. The second takes air from the dining room, cools it and returns it. In many eateries the air conditioning duct is a few meters long and has its return in the hallway ceiling, right where the hot air leaving the kitchen passes. What enters there gets cooled and comes back to the tables in seconds.
Behind this guide is Climatiza, an inspection and duct cleaning service, which always starts from the real condition of the system before proposing any work in Pueblo Nuevo.
Over time, the inside of that short duct gets coated with a film that holds odor, and then the dining room smells of kitchen even with the kitchen off. That second stage is what a camera traveling the duct from the grille reveals and what justifies cleaning. But cleaning without fixing the airflow only buys a few weeks.
Signs in the dining room and on the grilles
- The kitchen door closes by itself or is hard to open when the extractor is on.
- The smell appears a few minutes after the griddle starts and drops when the air is switched off.
- The return grille closest to the kitchen is sticky or darker than the others.
- Tables next to the supply grille get more odor than those near the entrance.
- The air conditioning filter smells of food when removed.
- In the morning, before opening, the dining room already smells of yesterday menu.
What to check with a camera in a small premises
In an eatery the inspection is short because the system is short. What matters is looking at the right points in the right order, with the premises closed or between breakfast and lunch.
- Smoke test at the kitchen door. With extractor and air on, a smoke stick at the threshold shows where the air goes. If it flows into the kitchen, the dining room is feeding the hood.
- Return grille. It is removed and the first run is viewed. A greasy film or amber color confirms kitchen air has been entering for a while.
- Full duct run. In a few meters the camera reaches the unit. Joints, elbows and the coil box are recorded.
- Coil and pan. Odor concentrates where there is moisture. A pan with standing water smells on its own, as the EPA notes in its appendix on air systems.
Weekly routine for the owner
After fixing the airflow and cleaning what the camera showed, the odor only returns if the routine is neglected. These tasks fit into the closing of a slow day and need no technician.
| Task | Frequency | What to look for |
|---|---|---|
| Wash the air conditioning filter | Every week | That it does not smell of food when dry |
| Clean the return grille with a mild degreaser | Every week | That no sticky film remains |
| Check that the kitchen door closes and seals | Every week | Weatherstrip intact, door closer working |
| Look at the condensate pan | Every two weeks | No standing water or smell |
| Compare the dining room smell at opening | Every day | If it returns, check the extractor before the duct |
A Pueblo Nuevo eatery that keeps that routine stops fighting the smell and can focus on what it sells. How a broader check is organized in a premises with a kitchen is in how kitchen and dining room are separated in a restaurant, and the case of a shop without a kitchen but with the same badly placed return, in how a small store is checked. The context of the district is in how a visit is scheduled in this part of the city.
Questions about a specific building can be sent to Climatiza, and the service description shows what a visit includes.

Frequently asked questions
Does a bigger extractor solve the smell in the dining room?
It usually makes it worse. A more powerful extractor pulls more air out of the kitchen and, with no make up intake, draws even more from the dining room. First the kitchen gets its own air intake, then the power is adjusted.
Why does it smell more in the morning than during service?
Because at night the air is off and the odor held in the duct and filter builds up in the closed room. It is the sign that the duct already has a film and should be viewed with a camera.
Does moving the return grille away from the kitchen help?
Yes, it is often the cheapest and most effective fix in a small premises. The return is moved to the side of the dining room farthest from the kitchen and the old opening is sealed, so hot kitchen air has no direct path to the unit.
How often should an eatery duct be looked at?
There is no fixed number. If the weekly routine is kept and the smell does not return, the duct can wait. If the filter smells of food despite weekly washing, it is time to run the camera and decide on what is seen.
