Full dining room, busy kitchen: which air is checked in a restaurant and when the work is done
The dining room air and the kitchen air live in the same building, and sometimes share returns.
Duct cleaning in a restaurant is the camera inspection and cleaning of the dining room air conditioning ducts, including the point where they join the kitchen air. The work is done outside service hours and section by section. Kitchen exhaust is a different service and is handled separately.
What sets restaurants and coffee shops apart
Facts that help decide in restaurants and coffee shops
- In Panama: INEC’s Business and Establishment Directory (reference year 2022) records 13,586 establishments in the "Hotels and restaurants" category, the second largest sector by establishments after commerce (39,937), out of 96,397. The category groups lodging and food service, so it is not restaurants alone. (INEC, Business and Establishment Directory 2022)
- Technical fact: The US Fire Administration reported about 7,100 restaurant structure fires in 2002, around 64% caused by cooking. Its report explains that NFPA 96 covers the exhaust and grease removal systems of commercial kitchens, a system separate from the dining room air conditioning. The figure is from the US and from some years ago. (USFA, Restaurant Fires (2004))

How the work is organized in restaurants and coffee shops
- Look at the dining room and where it joins the kitchen. The camera runs through the dining room duct and the point of contact with the kitchen air.
- Work outside service. The work is scheduled by sections and during closing hours, so the premises open on time.
- Hand over what was seen. A photo report, with the sections cleaned and those that could not be reached.

Frequently asked questions
Does it include kitchen exhaust cleaning?
No. Kitchen exhaust is a different service with a different procedure. This page covers the air conditioning ducts.
Does the restaurant have to close?
The work is done outside service hours. If the premises close at night, it is scheduled section by section during those hours.
What about a unit inside a shopping center?
First it is checked which part of the air depends on the unit and which on the shopping center, and it is coordinated with the management.
Does it apply to a small coffee shop?
Yes. With fewer ducts the run is shorter, but it is still checked with a camera before deciding.
How often does it make sense to check the ducts in restaurants and coffee shops?
There is no fixed frequency. It makes sense to look when odors appear in the dining room or moisture on the grilles, and after remodeling.
What does the report include for restaurants and coffee shops?
It brings photographs of the inside of the ducts. It keeps what belongs to the dining room apart from what touches the kitchen.
