In a bakery the oven and the display case share a roof, and the air conditioning of the sales floor takes in heat, steam and fine flour dust.

Short answer

Duct cleaning in a bakery or pastry shop is the camera inspection and cleaning of the air conditioning ducts serving the sales floor and the offices, with attention to the returns and filters near the production area. The work is done between batches and oven exhaust is left out.

What sets bakeries and pastry shops apart

Oven heat reaches the sales floorProduction and sales often share a building. The camera shows whether the returns near the ovens collect more residue than those in the rest of the premises.
Flour, sugar and steam in the airThe fine powders from the dough and the steam from ovens and proofing settle on filters and grilles. That is why the filters of the production area are looked at first.
Shifts that start before sunriseProduction starts in the early hours and sales go on until night. The work is agreed section by section, in the gaps left between batches.

Facts that help decide in bakeries and pastry shops

  • In Panama: The INEC Business and Establishment Directory (reference year 2022) records 691 companies making bakery products, with 6,712 people employed, among the 5,123 companies in manufacturing industries. (INEC, Business and Establishment Directory 2022, table 12)
  • Technical fact: The EPA and NIOSH building air quality guide lists food preparation among the specialized use areas that can add contaminants to the rest of a building. Among the measures it describes are keeping the area under negative pressure relative to neighboring areas and installing local exhaust with make-up air. (EPA and NIOSH, Building Air Quality, section 7)

Types of place within bakeries and pastry shops

Type of placeWhat changes in the work plan
Bakeries and pastry shopsThe sales floor duct is told apart from the production one, and the production filters are looked at first
Production kitchens and cateringIt is identified which unit serves the oven zone and which one the packing and dispatch area
Food and beverage plantsThe plant’s quality team defines which areas are opened and under which entry rules
SupermarketsThe in-store bakery shares a ceiling with the aisles, and it is checked how much of its heat reaches those ducts
Coffee shopsPastry cases and counter: the grille above the preparation area is checked
Ice cream shopsCold cases and a door that is always open: it is checked how street humidity gets into the room

How the work is organized in bakeries and pastry shops

  1. Look at the sales floor and production separately. The camera runs through the sales floor duct and the returns near the production area, and the filters with the most residue are noted.
  2. Agree on the gap between batches. The person in charge defines which section is worked on in each batch-free slot.
  3. Separate what belongs to air conditioning. The report makes clear what belongs to the air ducts and what to the oven exhaust.

An example of what the report brings

An illustrative example of what a bakery report brings: a photo of a return filter next to the production area with a thin layer of pale dust, a photo of the sales floor duct with no visible build-up, and a note leaving oven exhaust out because it is a different service.

What you are left with at the end

  • A plan by sections, agreed with the production manager
  • Photos of the filters and returns near the oven
  • The list of sections that could not be reached
  • A note that keeps air conditioning apart from oven exhaust

Frequently asked questions

No. Oven and hood exhaust is a different service with a different procedure. This page covers the air conditioning ducts.

If production does not stop, the work starts with the sales floor and the offices, and the oven area is left for a slot agreed with the person in charge.

The shop unit, its filter and the return closest to the display case. With few ducts the inspection is short and leaves a clear picture of their condition.

Flour and sugar are fine powders that travel with the air and stick to filters and grilles. The camera shows how much is in the sales floor duct, and that decides whether to clean or only monitor.

There is no fixed frequency. It makes sense to look when the filters of the production area look loaded with residue, when odors appear on the sales floor, or after changing the oven or the layout of the premises.

It brings photographs of the inside of the ducts. It keeps what belongs to the sales floor and the offices apart from what belongs to oven exhaust.
