Ovens lit before dawn: what is looked at in the ducts of a bakery
In a bakery the oven and the display case share a roof, and the air conditioning of the sales floor takes in heat, steam and fine flour dust.
Duct cleaning in a bakery or pastry shop is the camera inspection and cleaning of the air conditioning ducts serving the sales floor and the offices, with attention to the returns and filters near the production area. The work is done between batches and oven exhaust is left out.
What sets bakeries and pastry shops apart
Facts that help decide in bakeries and pastry shops
- In Panama: The INEC Business and Establishment Directory (reference year 2022) records 691 companies making bakery products, with 6,712 people employed, among the 5,123 companies in manufacturing industries. (INEC, Business and Establishment Directory 2022, table 12)
- Technical fact: The EPA and NIOSH building air quality guide lists food preparation among the specialized use areas that can add contaminants to the rest of a building. Among the measures it describes are keeping the area under negative pressure relative to neighboring areas and installing local exhaust with make-up air. (EPA and NIOSH, Building Air Quality, section 7)
Types of place within bakeries and pastry shops
| Type of place | What changes in the work plan |
|---|---|
| Bakeries and pastry shops | The sales floor duct is told apart from the production one, and the production filters are looked at first |
| Production kitchens and catering | It is identified which unit serves the oven zone and which one the packing and dispatch area |
| Food and beverage plants | The plant’s quality team defines which areas are opened and under which entry rules |
| Supermarkets | The in-store bakery shares a ceiling with the aisles, and it is checked how much of its heat reaches those ducts |
| Coffee shops | Pastry cases and counter: the grille above the preparation area is checked |
| Ice cream shops | Cold cases and a door that is always open: it is checked how street humidity gets into the room |
How the work is organized in bakeries and pastry shops
- Look at the sales floor and production separately. The camera runs through the sales floor duct and the returns near the production area, and the filters with the most residue are noted.
- Agree on the gap between batches. The person in charge defines which section is worked on in each batch-free slot.
- Separate what belongs to air conditioning. The report makes clear what belongs to the air ducts and what to the oven exhaust.

Frequently asked questions
Does it include oven exhaust?
No. Oven and hood exhaust is a different service with a different procedure. This page covers the air conditioning ducts.
Does baking have to stop during the work?
If production does not stop, the work starts with the sales floor and the offices, and the oven area is left for a slot agreed with the person in charge.
What is looked at in a small pastry shop?
The shop unit, its filter and the return closest to the display case. With few ducts the inspection is short and leaves a clear picture of their condition.
Why does flour dust matter?
Flour and sugar are fine powders that travel with the air and stick to filters and grilles. The camera shows how much is in the sales floor duct, and that decides whether to clean or only monitor.
How often does it make sense to check the ducts in bakeries and pastry shops?
There is no fixed frequency. It makes sense to look when the filters of the production area look loaded with residue, when odors appear on the sales floor, or after changing the oven or the layout of the premises.
What does the report include for bakeries and pastry shops?
It brings photographs of the inside of the ducts. It keeps what belongs to the sales floor and the offices apart from what belongs to oven exhaust.
